mime.types

I would like to add an additional mime.type for apache to recognize. Not sure with the various ways the directory structures have been redone what and where exactly I should make the change.

Can someone direct me to the proper file to edit?

Just stick it in /etc/mime.types JayBean, which is apparently the redhat 9 default.
